This is a perfect combination of sweet, spicy, and savory. Add a loaf of crusty bread and you have a great working mans meal. Adjust the amounts of ingredients to preference. This was something that was put together today without measuring anything other than the pound of sausage I browned.


2# Butternut Squash peeled, seeded, cubed
2 medium Sweet Potatoes, scrubbed, peeled and cubed
4-5 tart cooking Apples peeled and chopped
1/2# Sausage browned and drained
1 Onion, chopped
1/2 cup Brown Sugar
Cinnamon and Allspice to taste
1/2 stick melted butter

Pre-heat oven to 350
Layer Butternut, Sweet Potatoes, and Apples in 9x13 casserole.
Brown Sausage, remove from pan and drain on paper towels
Add onions to 2Tbsp Sausage drippings in skillet. Saute until soft and translucent.
Remove from pan and stir into Sausage.
Layer over other ingredients in dish
Sprinkle with Brown Sugar and spices.
Pour melted butter over all.
Cover with foil and bake at 350 for 1 hour.
